Dom Perignon's Oénotheque 1996 Vintage Champagne. When a Champagne has been released for a second time it earns the Oenotheque or "wine library"label and indicates when a Dom Perignon Vintage has reached its second peak in maturity - 15 to 20 years after harvest. Only the cellar master will determine this.
On the nose: Praline rapidly combines with citron and dried figs. Darker underlying iodine and peaty notes also emerge.
On the palate: Tense and assertive, tactile energy contained for a moment before vibrating and exploding. its opulence then becomes persistent and persuasive.
